Vermont Spring Chicken

Serves 4


1 chicken, 2 ½ -3 lbs. cut up or equivalent chicken breasts

½ teaspoon grated lemon rind

Dash of black pepper

2 teaspoons lemon juice

¼ cup butter, melted

½ cup Pure Vermont Maple Syrup

½ teaspoon salt

¼ cup chopped almonds


Preheat oven to 400 degrees. Place chicken in a shallow buttered baking dish. Mix remaining ingredients and pour evenly over chicken. Bake uncovered 50-60 minutes. Baste occasionally. Serve on a bed of rice.
